The body adapts within a few days, it seems. You enter ketosis, if like me you are not including roots or berries (I simply didn't save any from last year and I don't usually dig up city roots so would seem odd to start for this). Otherwise it would be a slower transition perhaps.
It's incredibly easy at this point, but each time I cycle past Javastraat, or other streets with lots of amazing food on offer, I feel that one month 100% will be enough. I like occasional dips into Iranian, Italian and other kitchens. Would also like to grow more of my own food. Incorporating homegrown produce isn't allowed in the research.
So interesting, the gut biome would change rapidly too? You do get fats from nuts, I guess. I think it would be possible to do this in Sweden if I prepare by drying mushrooms and freezing berries in autumn. Chestnuts are also not common around here, a little too far north, though I plan to grow a couple of trees. I don't think I would go 100% as I'm spending all my time growing veg and a forest garden and would have to eat from it! I do already eat a lot of nettles, dandelion, and garlic mustard leaves and you are inspiring me to have at least one day a week of completely foraged food. The flours would be difficult but plenty of wild meat is available!
Sounds like it's more than possible there Susanne but I agree that it would be a pity not to eat all of that good food in your forest garden and allotment.
The microbiome seems to be very adaptable, and easily influenced by what we expose it to. I'm still getting some mild food cravings, at certain times and attribute that to habit and some gut bugs crying out for what they love most. Am certainly intruiged to learn the results.
